Mumbai egg bhurji

Ingredients (Serves 3 )

1. Eggs – 5,  beaten

2. Oil – 2 – 3 tsp

3. Onion – 1/2 cup, chopped

    Ginger – 1 tsp, minced or grated

    Green chilies – 2 – 3, chopped

    Green bell pepper / capsicum – 1/4 cup, chopped (I didn’t have green, so used red bell pepper instead)

4. Tomato – 1 small, seeds removed and chopped

5. Turmeric powder – 1/4 tsp

    Pav bhaji masala powder – 3/4 tsp or to taste

6. Salt – To taste

7. Cilantro – 2 – 3 tbsp, chopped

8. Butter –  1 tbsp

9. Lemon juice – 1/2 tsp (optional)

Method

1. Heat oil in a pan/kadai at medium heat. Add onion, ginger and green chilies. Saute until onion turns transparent. Add chopped bell pepper and cook for a minute. Next add tomato, turmeric powder and pav bhaji masala powder. Cook for a minute.

3. Add the beaten eggs and scramble them. Top with butter, sprinkle cilantro, little lemon juice (optional) and serve immediately!
