Ingredients (Serves 4 – 5)
1. Chicken, bone-in – Around 3/4 kg, cut into medium-small pieces
2. Coconut oil – 2 tbsp
3. Onion – 1- 1.5 cup, thinly sliced
Ginger – 1/2 inch, thinly sliced
Garlic – 3 medium, finely chopped
Green chilly – 1, slit (optional)
Curry leaves – A few
4. Turmeric powder – 1/2 tsp
Kashmiri chilly powder – 1 – 1.5 tsp
Coriander powder – 2.5 tsp
Garam masala powder – 1/2 tsp
5. Hot water – 1 cup
6. Medium thick coconut milk – 1/4 – 1/2 cup (optional)
7. Salt – To taste
To season
8. Coconut oil – 2 tsp
Pearl onions – 4 – 5, thinly sliced
Curry leaves – A few
To roast and grind
9. Grated coconut – 1/3 cup
Dried red chilly – 1 broken
Pearl onion – 1, sliced

Method
1. In a pan at medium heat, add the grated coconut, broken dried red chilies, sliced pearl onion and stir occasionally until coconut turns brown. Set aside to cool. Grind to a fine paste in the small jar of a mixie, adding little water if required.
2. Heat 1.5 – 2 tbsp coconut oil in a heavy-bottomed pan at medium-high heat. Add sliced onion, salt, ginger, garlic, green chilly, few curry leaves and saute until onion turns golden. Bring down the heat to low. Add in the spice powders – turmeric powder, kashmiri chilly powder, coriander powder, garam masala powder and saute for a minute. Next add the chicken pieces and enough salt. Mix everything well. Cook for 5 – 6 minutes. Add 1 cup hot water. Mix well. Bring it to a boil. Cover and cook for about 20 minutes at medium-low heat, stirring once or twice in between, until the chicken is 3/4th done. Add the ground roasted coconut paste. Mix well. Bring to a boil. Cook covered for 5 – 10 minutes until chicken is completely done. Add coconut milk.and mix well. Cook for a minute at low heat. Switch off.
3. Heat 2 tsp coconut oil in a small pan. Fry pearl onions until brown. Add curry leaves and fry for a few seconds. Pour this over the prepared chicken curry. Cover with a lid and set aside for 20 minutes. Serve the yummy chicken curry with porotta/ idiyappam/ appam/ pidi/ chapathis etc.
