Chicken pepper fry

Ingredients (Serves 3)

1. Chicken (boneless thighs or bone-in) – 350 gm, cut into small pieces

Turmeric powder – 1/2 tsp

Ginger-garlic paste – 2 tsp

Kashmiri chilly powder – 1 tsp

Garam masala powder – 1 tsp

Pepper powder – 1/2 tsp

2. Coconut oil – 1.5 – 2 tbsp

3. Curry leaves – 1 sprig

Crushed / coarsely ground pepper corns – 1 tsp

4. Fennel seeds , crushed or garam masala powder – 1/2 tsp

Onion rings – 1/2 cup

Tomato, firm and seeds removed – 1/2 large, cut into cubes

5. Salt – To taste

Method

1. Marinate chicken pieces with the other ingredients numbered 1. Set aside for at least 1 hour.

2. Heat coconut oil in a pan at medium-high heat. Add chicken pieces and fry until browned and done. Add coarse ground pepper powder, crushed fennel seeds, onion rings and tomato pieces. Increase the heat to high and stir-fry for 2 minutes. Serve hot with lemon / lime wedges.
