Ingredients (Serves 3)
1. Chena/yam – 340 gm, cut into small cubes (I used frozen yam)
2. Red chilly powder – 3/4 – 1 tsp
3. Turmeric powder – 1/2 tsp
4. Salt – To taste
5. Coconut oil – 2 tbsp
6. Water – 1/2 – 3/4 cup or as required
Method
Add the cubed chena/yam to a non stick pan along with chilli powder, turmeric powder, salt and water. Cook for 10 – 15 minutes until moisture is mostly evaporated and the yam pieces are done. Add coconut oil and mix well. Cook over medium or medium high heat, stirring in between for 8 –10 minutes until roasted well. Serve with rice and other side-dishes.
