A simple yet delicious dish that can be served with rice or chapathis. With just a few ingredients, its one of the easiest cauliflower dishes that you can prepare. Hope you’ll enjoy it as much as we did.
Ingredients (Serves 3)
Cauliflower – 1.5 – 2 cups, cut into small florets
Coconut oil – 1 – 1.5 tbsp
Onion – 1 – 1.5 cup, thinly sliced
Green chilies – 2 – 3, slit
Curry leaves – 1 sprig, torn
Tomato – 1.5 small, sliced or chopped
Salt – To taste
Pepper powder – 1 pinch (optional)
Method
Heat coconut oil in a kadai over medium-high heat. Add onion, little salt and saute until transparent. Add cauliflower florets, salt, green chilies, curry leaves and tomato pieces. Mix well. Cook covered for a few minutes. Taste-check for salt. Open and cook until dry, about 4 – 5 minutes. Add a pinch of pepper powder. Mix well and switch off. Do not over-cook. It tastes best when the cauliflower is a bit crunchy. Keep covered for 5 – 10 minutes. Serve warm with rice and other side-dishes.
