Ingredients (Serves 4)
1. Green beans – 1 cup, diagonally sliced
Carrot – 1 large, thinly sliced
Onion – 1/2 cup, thinly sliced and halved
Green chilies – 2 – 3, slit
Curry leaves – A few
Salt – To taste
2. Coconut oil – 1 tbsp
Method
Heat coconut oil in a kadai over medium-high heat. Add beans, carrot, onion, green chilies, curry leaves and salt. Mix well. Saute for a few minutes. Cover and cook ove low-medium heat for 5 – 6 minutes, stirring occasionally. Serve with rice and other side-dishes.
