Peanut Sundal

Ingredients(Serves 4)

1. Raw peanuts – 1 cup

Water – As required

Pressure-cook peanuts adding enough water until soft and done. Drain excess water and set aside.

2. Grated coconut – 3 – 4 tbsp

To season

3. Oil – 1 tbsp

Mustard seeds – 1/2 tsp

Dried red chilies – 2, broken

Urad dal –  3/4 tsp

Curry leaves – 1 sprig

Hing –/ kaya podi – 1 pinch

Green chilly – 1, slit (optional)

Method

Heat oil in a pan. Splutter mustard seeds and fry dried red chilies and urad dal. When urad dal turns brown add curry leaves, hing and green chilly. Stir for a few seconds. Add cooked peanuts, grated coconut and mix well. Add salt, if required. Cook for a minute and switch off. Serve it as a snack or with curd rice/lemon rice etc.
