Ingredients (Serves 2)
Cream cheese – 2 – 3 oz
Carrot (grated or fine chopped) , celery, cucumber, red bell pepper, finely chopped – 1 – 2 tbsp each
Cilantro and mint leaves – 1 tsp each, finely chopped (optional)
Salt and pepper – To taste
Combine cream cheese with all the other ingredients. Spread on a bread slice. Top it with another bread slice. Trim off the edges and halve. Enjoy!
