Ingredients (Serves 3)
1. Medium thick coconut milk – 1 cup (I used canned coconut milk (Chaokoh brand))
2. Condensed milk – 2.5 – 3 tbsp(You can use sugar or honey instead)
3. Vanilla extract – 1/2 tsp
4. Chia seeds – 2 – 2.5 tbsp
5. Ripe mango, firm – 1 – 2, chopped
Method
In a saucepan, combine coconut milk and condensed milk. Stir continuously over medium heat until just hot. Switch off. Add vanilla extract and chia seeds. Whisk well for a minute so lumps do not form. Set aside until it cools down. Let it rest for 30 minutes- 1 hour until thickened or refrigerate overnight or for 3 – 4 hrs. Top it with chopped mango, banana, berries or nuts just before serving. Enjoy!!
