Asian prawn and veggie stir-fry

Ingredients (Serves 2)

1. Prawns – 15 large (Around 1 cup), cleaned

2. Oil – 1 tbsp

3. Garlic – 1 tsp, minced

    Crushed red chilly flakes – 1/4 tsp

4. Onion – 1/4 cup, cubed

    Bell pepper, I used green and yellow – 1/4 cup each

    Mushroom – 1/2 cup, quartered

    Spring onion, white part – 1/4 cup, sliced diagonally

5. Salt – To taste

For the sauce

6. Soy sauce – 1 tbsp

   Chilly sauce – 3/4 – 1 tsp

   Corn starch – 1/2 tsp

   Sugar – 1/4 tsp

   Oil – 1/2 tsp

In a small bowl, combine all  ingredients for the sauce.

Method

Heat 1 tbsp oil in a pan at medium heat. Add minced garlic and crushed chilly flakes. Saute for 30 seconds and then add all the veggies. Stir-fry for 3 – 5 minutes adding a pinch of salt. Move them to a corner and add the prawns and sauce mixture. Mix well and cook for about 4 – 5 minutes at medium-high heat until prawns are almost done. Mix in the veggies and cook for 2 more minutes. Do not overcook the veggies and prawns, veggies should retain their crunch. Serve this delicious prawn and vegetable stir-fry immediately with steamed rice / fried rice / noodles.

Tip

Keep all the ingredients ready before you start cooking. You can also use other veggies such as broccoli, Chinese cabbage, zucchini, baby corn etc.
