Potato Thoran
Potato thoran recipe
Ingredients (Serves 4 – 5)
1. Potato – 2 large or 4 – 6 small
2. Oil – 1.5 tbsp
3. Mustard seeds – 1/2 tsp
Dried red chilies- 2, broken
Curry leaves – A few
4. Grated coconut – 1 – 1 1/4 cup
Turmeric powder – 1/4 tsp
Curry leaves – A few
Garlic – 2 – 3 small cloves
Green chilies – 2 – 3
Cumin seeds – 1/4 tsp (optional)
5. Salt – To taste
Method
1. Cut the potatoes into thin strips, as shown in the pictures below. Put them in a vessel filled with water, to prevent discoloration (Drain water before you start cooking).
2. Crush the garlic and green chilies in a mortar and pestle. Combine grated coconut with turmeric powder, curry leaves and the crushed garlic-green chilly mixture. Mix well with your fingers(njeruduka).
3. Heat oil in a pan at medium heat and splutter mustard seeds. Fry dried red chilies and curry leaves. Next add the drained potatoes, coconut mixture and enough salt. Mix well. Sprinkle 2- 3 tbsp water and cook covered for about 10 – 12 minutes over low or medium-low heat stirring in between, until the potatoes are done. Open and stir for a minute until completely dry. Serve the yummy potato thoran with rice and any side-dishes.
Sounds very new the potato thoran like other veggie poriyal.. may be its kerala method :).. we usually make stir fry in potatoes.. will make a try like this method
Many ways of doing this. Yep that a kerala way thoran. This is how my mom makes:
Cut 2 potato in very small pcs. Heat 1.5 tbspn coconut oil (pls dont try with other oil, try once wid coconut oil) in a pan add the potato, mix it well with oil for 1 min, then add 1 small tspn turmeric , 1 tspn chilli pwdr, 1/2 tspn cumin pwder and salt to taste. Mix it well and cover the lid. Cook in a low flame. Ensure you run laddle every 2-3 mins to avoid sticking it to the pan. And once the potato is cooked (max 15 mins in low flame), you can add 2 springs of curry leaves to it and cook it for 1 more min. Feel that taste n aroma. Try n reply.. Chaooooo 🙂
