Kurkuri Bhindi Recipe
Ingredients(Serves 4)
1. Bhindi / okra – 20 – 25
2. Turmeric powder – 1/2 tsp
Chilly powder – 1/2 tsp
Coriander powder – 1/2 tsp
Cumin powder – 1/2 tsp
Lemon juice – 3/4 tsp
Salt – To taste
Ajwain / aymodakam – 1/2 tsp
3. Besan / kadalamavu / chickpea flour – 2 tbsp
Rice flour – 2 tbsp
Method
1. Wash the okra well and pat dry. Slice them lengthwise and cut into very thin slices. Transfer to a deep bowl and toss them lightly. Remove the okra seeds that settle at the bottom.
2. Marinate them with ingredients numbered 2 for at least 10 – 15 minutes.
3. Sprinkle chickpea flour and rice flour and toss well.
4. Heat oil over medium-high heat and deep-fry the okra slices in 2 – 3 batches, for 4 – 5 minutes until golden brown and crispy. Remove them to a paper towel. You can have it with rice and other side-dishes or as a snack..
Just this today… Came out really crispy. But instead of lime juice, I added amchur powder and sprinkled chat masala after frying. Tasted great 🙂
