Ingredients(Serves 4 – 5)
1. Chicken, bone-in – 1 kg, cut into medium-small pieces
Ginger-garlic paste – 2 tsp
Turmeric powder – 3/4 tsp
Kashmiri chilly powder – 1 tbsp
Garam masala powder – 1 tbsp
Pepper powder – 1/4 tsp
Salt – To taste
2. Coconut oil – 3 tbsp
Onion – 2.5 cup, thinly sliced
Garlic – 1 tsp, minced
Green chilies – 3- 4, slit
Curry leaves – 1 sprig
Garam masala powder – 1 pinch
Tomato, firm – 1 medium, seeds removed and cubed
Method
1. Marinate the chicken pieces with the other ingredients numbered 1. Set aside for at least 30 minutes. Sprinkle 2 – 3 tbsp water. Cover and cook for 30 minutes until done, stirring once or twice in between.
2. Heat 3 tbsp coconut oil in a pan at medium-high heat. Fry the cooked chicken pieces until browned on both sides, about 2 – 3 minutes on each side. Remove to a paper towel.
3. In the remaining oil, add thinly sliced onion, slit green chilies, curry leaves, little salt, minced garlic and saute for a few minutes until the raw smell of onion disappears. Add fried chicken pieces, pinch of garam masala powder, tomato cubes and stir-fry at high heat for 2 minutes. Switch off. Serve hot with chapathis.
