Achinga payar ularthiyathu/ Achinga payar mezhukkupuratti

Ingredients (Serves 4)

1. Achinga payar – Around 200 gm, cut into 3/4 inch pieces

    Sliced coconut / thenga kothu – 1/4 cup

    Turmeric powder – 1/2 tsp

    Pearl onions – 5 – 6, halved or quartered

    Green chilies – 2, slit

   Curry leaves – A few

    Water – 3 tbsp or as required

    Salt – To taste

2. Coconut oil – 1 – 1.5 tbsp

3. Crushed chilly flakes – 1/2 tsp

Method

1. Cover and cook the ingredients numbered 1 in a pan for about 8 – 12 minutes or until water is almost completely evaporated and achinga payar pieces are done.

2. Heat coconut oil in a pan at medium-high heat. Add chilly flakes and stir for a few seconds. Add cooked achinga payar and cook for about 5 – 6 minutes until slightly roasted.
