Mutton pepper roast
Ingredients (Recipe Courtesy – Adapted from Marias Menu)
1. Mutton – 500 – 600 gm, cut into medium-small pieces
2. Whole black pepper corns – 2 tsp
Green chilies – 2
Ginger – 1.5 tbsp, chopped
Garlic – 1.5 tbsp, chopped
Cilantro – 2 tbsp, chopped
3. Salt – To taste
Lemon juice – 2 tsp
Grind the ingredients numbered 2 to a fine paste adding 1 tbsp water in the small jar of a mixie. Add this ground masala, salt and lemon juice to the mutton pieces. Cover and set aside for at least 1 hour or overnight in the refrigerator. Remove it from the refrigerator 30 minutes before you are ready to cook.
4. Coconut oil – 1 – 1.5 tbsp
5. Fennel seeds, crushed slightly – 1/2 – 3/4 tsp
6. Curry leaves – 1 sprig
Onion – 1 medium, thinly sliced (Makes about 1.5 cup, sliced)
Ginger –1 tsp, thinly sliced
Garlic – 1 tsp, chopped
7. Turmeric powder – 1/2 tsp
Coriander powder – 2.5 tsp
Garam masala powder – 1/2 tsp
8. Tomato – 1 medium, sliced
9. Hot water – 1/2 – 3/4 cup or as required
10. Crushed pepper – 1/8 tsp
Garam masala powder – 1 pinch
11. Salt – To taste
Method
1. Heat oil in a pressure cooker at medium-high heat. Add crushed fennel seeds and stir for a few seconds. Add curry leaves, onion, ginger, garlic, little salt and saute until golden brown. Add turmeric powder, coriander powder and garam masala powder. Saute for a couple of minutes until their raw smell disappears. Add sliced tomato and cook for a few minutes. Next add mutton pieces and cook for 4 – 5 minutes, stirring in between. Add 1/2 – 3/4 cup cup water and mix well. Cover and cook for 3 – 4 whistles or until mutton pieces are done. Switch off.
2. Open the cooker when pressure releases or after 10 – 15 minutes. There would be some gravy inside. Cook until mutton is well-coated with the masala. Sprinkle freshly crushed pepper and a pinch of garam masala powder. Switch off. Cover and keep for 15 minutes. This mutton pepper roast is very easy to make and is super-delicious…do give this a try friends!! Serve with porotta/chapathi/rice/pulao etc. Enjoy!
