It’s summer and Ice cream mania starts again! This Ice cream recipe is very special and brings back lots of childhood memories. My mom’s simple custard ice cream.
Amma used to make ice cream with eggs when we were small and we just loved it. It was nothing fancy at all but we asked her to make them all the time. Now with summer going in full swing, my son Aarav demands for popsicles and ice cream.
My regular viewers might remember my ice cream mania three years back when I made many varieties of no machine eggless ice cream with condensed milk and heavy cream. Well, this year I was in no mood to make ice creams but the little one craved for ice cream and left me with no choice but making them. I tried buying ice cream couple of times but then thought it’s better to make instead of buying. Aarav gets very excited when he see me making ice cream for him and it’s so thrilling to hear him say ” you are the best mother in the whole world” every single time he eats homemade ice-cream :). Anyways thanks to him I have now started to make new varieties of ice cream that I haven’t posted in the blog before. Let me start with this yummy custard ice cream..My moms recipe yields a slightly hard ice cream which was real yum but didn’t have the texture of store bought one. I have tweaked my mom’s recipe to make it smooth and fluffier. Here goes the recipe…
Ingredients
Whole milk – 1 cup
Eggs – 2
Sugar – 1/2 cup + 1 – 2 tbsp
Vanilla extract – 1 tsp
Heavy whipping cream – 1 cup
Method
1. Blend whole milk, eggs and sugar in the large jar of a mixie for 1 minute until frothy. Transfer it to a sauce pan and stir continuously at medium heat for 6 – 8 minutes until thick. Switch off. Add vanilla extract and mix well. Set aside to cool completely.
2. Whip the heavy cream in a large bowl until it forms stiff peaks, takes about 6 minutes. Add the cooled custard mixture. Whip or stir until just combined and switch off. Add chocolate chips/ raisins/ tutti frutti / chopped nuts etc. Mix gently. Transfer to a freezer safe bowl. Freeze for 6 – 8 hrs or until set. Enjoy!!
