I have a great news to share with you all today. My recipes and food pictures got published in Vanitha ( the most popular life style magazine in Kerala) for the second time. Yaay!!!
My regular viewers might remember the first time my recipes got published in Vanitha. It was in October 2014. The Vanitha editor and photographer had come to my home in Kerala for the photo-shoot. Later, I shared recipes and food pics for Vanitha Pachakam magazine too.
A few weeks back, the Vanitha senior editor Ms. Merly Eldho contacted me for lunchbox recipes and pictures for june issue and I got super excited. I sent them in a couple of days and was looking forward for the issue. The issue got released this week and here it is..
To celebrate , I have an easy yet yummy summery dessert for you – strawberry and cream parfait combining fresh strawberries, cookies and whipped cream. Hope you enjoy it as much as we did!
Ingredients (Serves 4 – 6)
Strawberry Layer:
1. Strawberries – 2 cups, sliced or chopped
Sugar – 1 – 2 tsp
Cream layer:
2. Heavy whipping cream – 1.5 cup
Vanilla extract – 1/2 tsp
Condensed milk – 1/4 – 1/2 cup or to taste (you can use 2 – 3 tbsp powdered sugar instead)
3. Cookie Layer:
Graham crackers / oreo cookies/ chocolate chip cookies or any cookies you like – 8 – 10 or as required
Method
Strawberry Layer:
1. Combine strawberries and sugar in a medium bowl. Set aside for 10 – 15 minutes until berries turn soft and juicy.
Cream Layer:
2. In a large mixing bowl, combine heavy cream, condensed milk and vanilla extract. Beat with a hand mixer on high speed until you get soft or medium peaks, takes about 4 – 6 minutes.
3. Cookie Layer:
Crush the cookies using your hands (or place them in a zipper lock and crush using a rolling pin)
4. To assemble
Arrange serving glasses of your choice. Put 1 – 2 tbsp crushed cookies into the bottom of each glass. Top with 2 – 3 tbsps of strawberries followed by 1/4 cup of whipped cream. Repeat the layers again. Serve immediately or refrigerate until you are ready to serve.
