Ingredients (Serves 3 – 4)
1. Oil – 1.5 – 2 tbsp
2. Onion – 1/2 cup, thinly sliced
3. Potato – 2 medium, thinly sliced
Turmeric powder – 1/2 tsp
Chilli powder – 1/2 tsp
Coriander powder – 1/2 tsp
4. Eggs – 4
Cilantro – 1/2 cup, chopped
Green chilies – 2, chopped
Pepper powder – 1 pinch
5. Salt – To taste
Method
1. In a medium bowl, whisk eggs adding chopped cilantro, green chilies, pepper powder and salt.
2. Heat oil in a pan over medium-high heat. Add sliced onion and a pinch of salt. Saute until onion turns golden brown. Add potato pieces, turmeric powder, chilly powder and coriander powder. Mix well and cook covered for 4 – 5 minutes, stirring in between, until potato pieces are cooked completely. Add egg mixture and scramble until done. Serve immediately.
