Curd Cauliflower Rice Recipe
Ingredients (Serves 3)
1. Cauliflower – 1 small
2. Yoghurt – Around 1 cup or as required
Salt – To taste
3. Oil – 2 tsp
4. Mustard seeds – 1/2 tsp
Curry leaves – A few
Urad dal – 1/2 tsp
Cashews – 8 –10
6. Green chilly – 1, finely chopped
Carrot – 3 tbsp, finely chopped
Green bell pepper – 3 tbsp, finely chopped (optional)
7. Cucumber – 2 tbsp
Method
1. Wash and cut the cauliflower into florets. Use a food processor or grater to rice the cauliflower. Boil for a few minutes in enough water and drain well OR stirfry for 5 – 7 minutes, adding salt, until done. Set aside until it cools down. Add yoghurt and mix well. Taste-check for salt.
2. In a small pan, heat oil over medium heat. Splutter mustard seeds and fry curry leaves, urad dal and cashews. Stir until golden. Add green chilly, chopped carrot and green bell pepper. Cook a minute. Add this to the cooked cauliflower and yoghurt mix. Finally add cucumber pieces. Mix well. Serve with pappadam and a pickle or any side-dish you like. We had it with potato fry, peanut salad, fryums and sweet lemon pickle.

Add the yoghurt when the cooked cauliflower cools down..

It will be around 1.5 – 2 cups..
