Vegetable Fried Rice

Ingredients (Serves 3)

  1. Basmati rice, cooked – 2.5 cups (Add salt while cooking rice. Cool down completely.)

2. Oil – 1 tbsp

3. Green beans – 1/4 cup, diagonally sliced

Onion – 1/3 cup, thinly sliced and halved

Carrot – 1/3 cup, chopped

Cabbage – 1/2 cup, thinly sliced and halved

Green bell pepper – 1/4 cup, thinly sliced

4. Soy sauce – 1 – 2 tsp

Vinegar – 1 tsp

Green chilli sauce – 1.5 –  2 tsp or to taste

5. Salt and pepper – To taste

6. Butter – 1 – 2 tsp

7. Spring onion – 2 – 3 tbsp

Method

Heat oil over high heat and add green beans. Cook for two minutes. Add onion, carrot, cabbage and bell pepper. Add a pinch of salt and pepper. Stir-fry for 1 – 2 minutes. Add the cooked rice, sauces and a pinch of pepper powder. Stir-fry for 1 – 2 minutes until hot. Taste check for salt. Add butter, spring onion and stir-fry for a minute. Switch off the flame.
