    Holiday season is over and everyone is back to work. Wondering how to get rid of all those carbs and fats that your body has accumulated during Christmas and New Year? Well, I do have a simple dish for you with a special ingredient that will work wonders on your body – Curd Quinoa. Quinoa (pronounced as keen-wah), a popular super food is light and healthy, and when it takes the form of curd quinoa just like our curd rice, it gets all the more healthier and tastier. Oh, if you are craving for a yummy comfort food then this is the one!
   Curd rice is my all time favorite comfort food. And now there is another one, Curd Quinoa. It tastes as good as the original curd rice. You wont miss rice at all. And as you all know, quinoa is incredibly nutritious and is high in protein, fiber and iron so do try out this recipe. But now I have decided to incorporate more of healthy stuff such as quinoa , lentils, greens, salads etc into our diet. So my dear readers, watch out…….. coz yours truly is soon going to fill this blog with more healthy and delicious recipes! After all , we do need to watch our health right! ๐Ÿ™‚

Curd Quinoa Recipe

Ingredients (Serves 3)

1. Quinoa โ€“ 1 cup

    Water โ€“ 2 cups

2. Yoghurt โ€“ 1 – 1.5 cup

    Salt โ€“ To taste

3. Oil โ€“ 2 tsp

4. Mustard seeds โ€“ 1/2 tsp

    Dried red chilies โ€“ 2, broken

    Curry leaves โ€“ A few

5. Urad dal โ€“ 1/2 tsp

    Cashews โ€“ 8 โ€“10

6. Green chilly โ€“1, finely chopped

    Carrot โ€“ 3 tbsp, finely chopped

    Green bell pepper โ€“ 3 tbsp, finely chopped

7. Pomegranate seeds โ€“ 2 tbsp

    Cucumber โ€“ 2 tbsp

Method

1. In a saucepan, add quinoa and water. Cook covered until done. Set aside to cool.

Combine cooked quinoa with yoghurt and salt.

2. In a small pan, heat oil at medium heat. Splutter mustard seeds and fry dry red chilies and curry leaves. Next add urad dal and cashews and stir until golden. Add green chilly, chopped carrot and green bell pepper. Cook for 2 minutes. Add this to the quinoa. Finally add pomegranate seeds and cucumber. Mix well. Serve with pappadam and a pickle or any side-dish you like. This recipe yields around 4 cups of curd quinoa.
