Easy Chicken Masala Roast

Chicken masala roast

Ingredients

1. Chicken – 1/2 kg, cut into medium pieces

2. Oil – 2.5 tbsp

3. Onion – 1 cup, finely chopped

    Ginger – 1 tbsp, minced

    Garlic- 1 tbsp, minced

    Green chilly – 1, slit

    Curry leaves – 8 – 10

4. Turmeric powder – 1/2 tsp

     Kashmiri chilly powder – 1 tsp

     Coriander powder – 1 tsp

     Pepper powder – 3/4 tsp

     Cumin powder – 1/2 tsp (optional)

5. Garam masala powder – 1/2 – 3/4 tsp

6. Hot water – 1 cup

7. Tomato, firm – 1 medium, seeds removed and cubed

8. Cilantro / coriander leaves – 1/4 cup, finely chopped

9. Salt – To taste

Method

Heat oil in a deep pan/ cheena chatti. Add onion, ginger, garlic, green chilly, curry leaves and little salt. Saute until onion turns light golden. Add turmeric powder, kashmiri chilly powder, coriander powder, pepper powder and cumin powder. Mix well and stir until their raw smell leaves. Add chicken pieces. Mix well and cook for a couple of minutes. Add hot water, garam masala powder and enough salt. Mix well. Cover and cook until chicken pieces are almost done and gravy is very thick, stirring occasionally,  about 25 – 30 minutes at medium heat. Open the lid and cook for a few minutes until the chicken pieces are coated well with the masala. Add 1/4 cup finely chopped cilantro and tomato cubes. Cook at high heat for 1 minute. Switch off. Sprinkle some more cilantro. Serve hot with chapathis/ rice/ pulav etc.
