Ingredients (Serves 4 – 5)
1. Pavakka / bitter gourd – 1 large, finely chopped
2. Grated coconut – 1 cup
Onion – 1/2 cup, finely chopped
Green chilies – 2, diagonally sliced
Curry leaves – A few
3. Coconut oil – 1 tbsp
Mustard seeds – 3/4 tsp
Dried red chilies – 2, broken
4. Salt – To taste
Method
1. Combine chopped bitter gourd with all the ingredients numbered 2.
2. Heat a cheena chatti at medium heat. Splutter mustard seeds and fry dry red chilies. Add bitter gourd mixture and enough salt. Sprinkle little water. Cover and cook at low heat stirring occasionally until the bitter gourd is done and the thoran is dry, about 12 – 15 minutes. Serve with rice and other side-dishes.
