Chilli egg

Ingredients

1. Eggs – 5, hard-boiled and quartered

2. Corn starch – 3 tbsp

    All purpose flour – 3 tbsp

    Chilly powder – 1/2 tsp

    Soy sauce – 3/4 tsp

    Salt – To taste

    Water – 1/2 – 3/4 cup

3. Oil –To deep-fry

4. Ginger – 1.5 tsp, minced

    Garlic – 1.5 tsp, minced

5. Onion – 1/2 cup, finely chopped

6. Celery – 3 tbsp, finely chopped

    Spring onion (white part) – 3 tbsp

   Bell pepper (capsicum) – 1/2 cup, thinly sliced

7. Kashmiri chilly powder – 1/2 tsp

    Soy sauce – 1 – 1.5 tbsp

    Green chilli sauce – 1- 1.5 tbsp

    Vinegar – 1 tsp

    Sugar – A tiny pinch

8. Cilantro – 2 – 3 tbsp, to garnish

    Spring onion – 1/4 cup, chopped

9. Salt – To taste

Method

1. Mix all the ingredients numbered 2 to a thick batter. Dip the quartered eggs in this batter and deep-fry until golden-brown. Drain and set aside.

2. Heat 2 tbsp oil (you can use the oil that you used for frying) in a wok/ pan and saute ginger and garlic for 30 seconds. Next add finely chopped onion and saute for a couple of minutes. Add celery, spring onion, capsicum and a pinch of salt. Saute for a minute. Add chilly powder, soy sauce, green chilly sauce and vinegar.Mix well. Taste check for salt. Add fried eggs and toss well. Sprinkle spring onion and cilantro. Toss well and serve hot. You can serve it as an appetizer or as a side-dish along with fried rice / noodles.
