Ingredients
1. All purpose flour – 1.5 cup
Sugar – 1 cup + 1 – 2 tbsp
Baking soda – 1 tsp
Salt – 1/2 tsp
2. Nutmeg powder – 1/2 tsp
Cardamom powder – 1/2 tsp
Cinnamon powder – 1/2 tsp
All spice – 1/4 tsp
Ground ginger – 1/4 tsp
You can replace the above spice powders numbered 2 with 2 tsp pumpkin pie spice.
3. Pumpkin puree – 1 cup (I used cannned organic pumpkin)
Eggs – 2
Canola oil – 1/2 cup
Vanilla extract – 1 tsp
4. Walnuts – 1/2 cup, chopped
5. Roasted pumpkin seeds / sun flower seeds – 3 tbsp
Method
1. Preheat oven at 350 F.
2. Sift and combine all the dry ingredients numbered 1 and 2 in a large bowl.
2. In a medium bowl, combine the wet ingredients numbered 3.
3. Pour the wet ingredient mixture into the dry ingredients and stir until combined (do not over mix).
4. Pour this mixture into a greased or parchment paper lined 9 x 5 x 3 inch pan. Tap the pan slightly and smooth out the batter after pouring it into the pan. Sprinkle pumpkin seeds / sun flower seeds on top of the batter. Bake for about 50 – 60 minutes until a toothpick inserted into the center comes out clean. Take it out and let it cool in the pan for 5 -10 mts or so. Transfer it to a wire rack. Cool, slice and enjoy!!
