Peas and Egg stirfry – Street food style
Ingredients (Serves 2 – 3)
1. Green peas – 1/2 – 3/4 cup, cooked (Soak dried green peas in enough water for 8 hrs. Cook in a vessel until done, take care not to overcook them. Drain and set aside.)
2. Eggs – 3 – 4
3. Coconut oil / butter – 2 – 3 tsp
4. Onion – 1/3 cup, finely chopped
Ginger – 1/2 tsp, minced
Green chilies – 2, finely chopped
Curry leaves – 4 – 5, chopped
5. Turmeric powder – 1 pinch
6. Black pepper powder – 1 – 2 pinches
7. Salt – To taste
Method
Heat coconut oil in a pan. Add onion, ginger, green chilies, curry leaves, little salt and saute until onion turns transparent, around 1 – 2 minutes. Add cooked green peas and stir for a minute. Add a pinch of turmeric powder and mix well. Next break 3 – 4 eggs into the pan and scramble well. Add a pinch of pepper powder, few drops of coconut oil or little butter and mix well. Yummy peas mutta fry is ready to serve! Serve immediately with chopped red onion and lemon wedges. Enjoy!!

Can we use frozen peas?
Yes, you can but it tastes best with dried green peas..
