Chicken Shawarma Sandwich

Ingredients (Makes 4 wraps)

1. Boneless chicken (thighs preferred) – 500 gm, thinly sliced (I used chicken breast)

2. Greek yoghurt / hung curd – 1.5 tbsp

Lemon juice – 1.5 tbsp

Minced garlic or garlic paste – 1 tsp or 1/8 tsp garlic powder

Seven spice powder – 1/2 – 3/4 tsp

Coriander powder – 1 tsp

Cumin powder – 1/2 tsp

Chilly powder – 1/2 tsp

Paprika – 1 tsp

Cinnamon powder – 1/8 tsp

Cardamom powder – 2 pinches

Dried parsley – 1/4 tsp

Olive oil – 1.5 tsp

Pepper powder – 1/4 tsp

Salt – As required

3. Olive oil – 3 tbsp

To assemble

4. Pita bread / any flatbread – 4

5. Mayonnaise /  toum (garlic sauce)

6. Pickled turnips and cucumber

7. French fries

8. Cucumber, onion and tomato slices

9. Lettuce / cabbage, thinly sliced

For garlic mayonnaise

10. Egg – 1  whole + 1 egg yolk (at room temperature)

Garlic – 4 large, crushed in a mortar and pestle (you can reduce if you don’t prefer garlicky taste)

Lemon juice – 1.5 tbsp

Vinegar – 3/4 tsp

Sugar – 1 – 2 pinches or to taste

Mustard powder / 1/2 tsp dijon mustard – 1 pinch (optional)

Pepper powder – 1 pinch

Salt – To taste

Canola oil / sunflower oil / any neutral oil – 1/2 cup

Blend the egg and all the other ingredients ( except oil) in the large jar of a mixie/blender or food processor for 30 seconds. Add half of the oil and blend again. Add the remaining half and blend for 1 – 2 minutes until thick and creamy. Transfer to a bowl and refrigerate.

Method

1. Marinate the chicken pieces with all ingredients numbered 2. Cover and refrigerate for at least 2 hours or overnight.

2. Heat 2 – 3 tbsp oil in a wide pan. Fry chicken pieces until browned, about 8 – 10 minutes.

3. Warm the pita bread and spread 1 – 2 tbsp garlic mayo in the center. Top it with fried chicken followed by onion, tomato, French fries, pickled turnips/ cucumber, lettuce etc. Roll it up tightly. You can grill it for 1 – 2 minutes, if you want. Serve immediately.
