Fried chicken curry

Ingredients (Serves 7)

1. Chicken – 1.5 kg, cleaned and cut into medium pieces

2. Turmeric powder – 1/2 tsp

Chilly powder (medium or mildly spicy) – 1 tbsp

Pepper powder – 1/2 tsp

Garam masala powder – 1/2 tsp

Lemon juice – 1 – 1.5 tsp

Salt – As required

3. Coconut oil – 1/3 cup or As required

4. Onion – 1.5 large, finely chopped

5. Ginger-garlic, crushed or paste –  1.5 tbsp

Curry leaves – 1 sprig

6. Turmeric powder – 1/2 tsp

Chilly powder – 1 tsp

Coriander powder – 1 tbsp

7. Tomato – 3 small, chopped

8. Garam masala powder – 3/4 – 1 tsp

10. Thin coconut milk – 2 cups or as required

11. Salt – To taste

Method

1. Marinate chicken pieces with ingredients numbered 2 for at least 30 minutes or overnight in the refrigerator.

2. Heat coconut oil in a pan over medium heat. Shallow fry chicken pieces until browned and 1/2 – 3/4 th done. Remove to a large bowl.

3. Heat the remaining coconut oil and add finely chopped onion and little salt. Saute for 4 – 5 minutes until transparent. Add ginger-garlic, curry leaves and continue to saute until browned. Add turmeric, chilly powder and coriander powder. Saute for a few minutes over low heat. Add chopped tomatoes and cook until mushy and oil separates. Add garam masala powder and mix well. Add thin coconut milk and bring to a boil. Add fried chicken pieces and mix well. Cover and cook for 12 – 15 minutes until completely done. Taste-check for salt and add garam masala powder, if required. Mix well. Switch off. Keep covered for 10 minutes. Garnish with chopped cilantro. Serve with chapathi / pulao.
