Ingredients (Serves 3 – 4)
1. Coconut oil – 1 tbsp
2. Vendakka / okra – 15 – 20, cut into 3/4 inch pieces and then halved
Carrot – 1 large, cut lengthwise
Onion – 1 small, chopped (around 1/2 cup)
Green chilies – 2 – 3, slit
Salt – To taste
Method
Heat 2 –3 tsp oil over medium or medium-high heat. Add okra, carrot, onion, green chilies and salt. Mix well and cook for 8 – 10 minutes, stirring occasionally, until completely cooked. Serve with rice and other side-dishes.
