Ingredients (Serves 4)
1.Chicken Tenders or thinly sliced chicken breast – 1/2 kg
Pepper powder – 1/4 tsp
Salt – To taste
Other ingredients
2. Plain flour / maida – 1/3 cup
Salt – 1 pinch
Pepper powder – 1/4 tsp
3. Egg – 1
Salt and pepper – 1 pinch
Oil – 1 tbsp
4. Panko bread crumbs – 1 cup
Regular bread crumbs – 1/2 cup
Parmesan cheese, grated – 1/3 cup
Paprika – 1 tsp
Salt and pepper – 1 pinch
Method
- Place the chicken pieces in a bowl. Add 1/2 tsp pepper and little salt (around 1 – 2 pinches). Mix well and set aside.
- Combine plain flour/maida with 2 pinches of salt and 1/4 tsp pepper. Place it in a wide plate. Combine ingredients numbered 4 in another plate.
- In a bowl, beat egg with 1 tbsp oil and a pinch of salt and pepper.
- Preheat oven at 450 F. Line a baking sheet with foil and grease well. Or place a rack on top of the baking sheet.
- Coat the chicken pieces one by one, with maida mixture. Next dip in beaten egg and then roll in bread crumbs. Press down to coat well. Arrange the chicken pieces on the baking sheet. Spray with cooking oil spray or drizzle some melted butter or oil on them. Bake for 13 – 15 minutes at 450 F (you can flip them after 6 – 7 minutes but its optional.) Broil for 2 – 3 minutes until crisp and golden. Serve immediately with tomato ketchup or mayonnaise.
