Parippu Ularthiyathu

Ingredients (Serves 4)

  1. Toor dal – 3/4 cup (Soaked in enough water for 6 – 8 hrs)

Turmeric powder – 1/2 tsp

Ginger – 3/4 tsp, finely chopped

Green chilies – 2, diagonally sliced

Curry leaves – A few

Coconut oil – 1 tbsp

Water – 1/2 – 1 cup or as required

2. Salt

3. Coconut oil – 1 tbsp

4. Shallots – 6 – 8, crushed in a mortar and pestle

Garlic – 3 small, crushed

5. Crushed red chili flakes – 1 tsp or to taste

6. Curry leaves – 1 sprig

Method

  1. Cover and cook all the ingredients numbered 1 in a kadai. Stir occasionally and add hot water, if required. Cook till toor dal is done, slightly mashed up and water is evaporated completely. Add salt, to taste and mix well.
  2. Heat coconut oil in a pan. Add crushed shallots, garlic, curry leaves and cook till they turn light golden. Add crushed chili flakes and cook for 30 seconds. Add cooked dal and mix well. Taste-check for salt. Cook over low heat for 1 – 2 minutes and switch off. Serve with puttu, pappadam and egg curry or with plain rice and other side-dishes.
