Tomato Fry – Restaurant Style

Tomato Fry

Ingredients (Serves  3)

  1. Tomato  (firm) –  4 medium-small, sliced or cut into rounds
  2. Green chilies –  4, slit
  3. Oil – 1 – 1.5 tbsp
  4. Mustard seeds – 1/2 tsp
  5. Dry red chilly – 1, broken
  6. Onion – 2 medium-small, thinly sliced or cut into rounds
  7. Ginger – 1/2 tsp, thinly sliced
  8. Curry leaves – 3 – 4
  9. Turmeric powder – 1/2 tsp
  10. Kashmiri chili powder – 1 tsp
  11. Coriander powder – 1/2 tsp (optional)
  12. Garam masala powder – 1 pinch (optional)
  13. Hot water – 3 tbsp
  14. Tomato sauce / ketchup – 1 – 1 .5 tbsp (Optional)
  15. Salt – To taste
  16. Coconut oil / butter – 1 – 2 tsp for extra taste

Method

Heat 1.5 tbsp oil in a pan at medium heat. Splutter mustard seeds and fry dry red chilly. Add onion, ginger, green chilies, curry leaves, little salt and saute until onion starts changing color. Bring down the heat to low and add turmeric powder, chili powder and coriander powder,if using. Saute until their raw smell is gone. Add the tomato slices. Mix well. Cover and cook for 1 minute. Open the lid, add tomato sauce, 3 tbsp water and cook for a  few minutes. (One or two pinches of sugar can be added for an extra taste). The tomato slices shouldn’t get mashed up. Add a pinch of garam masala powder, for extra taste. Taste-check for salt.  Finally add 1 tsp coconut oil/butter. You can garnish it with 2 – 3 tbsp chopped cilantro. Serve warm with chapatis or poori.
