Ingredients
1. French baguette or any crusty bread (I used store-bought garlic bread)
2. Avocado – 1 ripe, pitted
Lemon juice – 1/2 tsp
Coarsely ground pepper powder – 1/4 tsp
Extra-virgin olive oil – 1/2 tsp
Salt – To taste
Method
1. Scoop out the flesh of an avocado into a small bowl. Mash it with a fork (do not make into a paste, it should be slightly lumpy). Add lemon juice, pepper powder, olive oil and salt. Give it a mix.
2. Preheat oven to 375 F. Cut the baguette to about 1/2 inch slices. Brush each slice with olive oil and place on a baking sheet. Toast them in an oven for a few minutes until lightly browned. Rub their tops with half of a garlic clove for a nice flavor.(you can sprinkle a little garlic powder instead). You can drizzle a little olive oil if you want. Spread avocado mixture. You can top it with chopped tomato/onion etc. It can be served for breakfast or as a snack/appetizer.
Tip
You can also use whole wheat/whole grain bread. Toast them, cut into triangles and spread the avocado mixture.
