Avocado, egg and mozzarella sandwich1

Ingredients

1. Sour dough / any Italian crusty bread – 2 slices

2. Avocado – 1/2 small, thinly sliced

    Salt and pepper – A tiny pinch

3. Egg – 1, hard-boiled and sliced

4. Tomato – 3 slices, seeds removed

5. Basil leaves – 2, sliced

6. Fresh Mozzarella cheese – 3 slices

    Salt and pepper – 1 pinch

7. Olive oil – 1 – 2 tsp

Method

Brush both sides of the bread slices with olive oil. Top a bread slice with sliced avocado. Season with salt and pepper.Top with sliced egg followed by tomato, basil leaves, mozzarella cheese and a pinch of salt and pepper. Top it with the other bread slice and place on a panini press. Grill until done. (You can use a regular pan instead of panini press. Heat it to medium and place the sandwich. Place a heavy weight on top or press down with a spatula and toast until both sides are golden). Slice and serve hot!
