Egg and peppers sandwich

Ingredients

1. English muffins – 2 (You can use bread/rolls also)

2. Eggs – 2

    Milk – 1 tbsp

    Parmesan cheese, grated – 1.5 tbsp (optional)

    Salt and pepper – to taste

3. Oil – 2 tsp

4. Onion – 1/4 cup, thinly sliced and halved

     Mini peppers – 3, sliced (You can use 1/4 cup regular green or red bell pepper cubes instead)

5. Salt and pepper – To season

6. Provolone cheese slice/ mozzarella cheese or any cheese you prefer – 2 slices

Method

1. Beat eggs with the other ingredients numbered 2.

2. Brush the inside of the English muffins with little butter and toast them slightly.

3. Heat oil in a small pan. Add sliced onion and mini peppers. Saute for 2 – 3 minutes until soft. Pour the beaten egg and cook for 2 – 3 minutes until it reaches your desired doneness. Top it with cheese slices. Cover with a lid so that the cheese melts, about 15 – 20 seconds. Top the toasted English muffins with the egg and cheese mixture and serve immediately.
