Ingredients (For 4 – 5 wraps, serves 2)
1. Chicken sausage or any sausage you prefer, cooked – 200 – 250 gm (2 – 3 links), sliced on an angle or into rounds (If using uncooked sausage, cook them first and then slice on an angle)
2. Oil – 3 – 4 tsp
3. Onion – 1 cup, thickly sliced
Red, orange, green or yellow bell pepper – 1/2 – 3/4 cup each, sliced
4. Garlic – 2 cloves, chopped
5. Salt and pepper – To taste
6. Chapathi / tortilla / any flatbread – 4
For mayo sauce
7. Mayonnaise – 1 – 2 tbsp
Greek yoghurt – 2 – 3 tbsp
Salt and pepper – to taste
Lemon juice – 1/2 tsp (optional)
Method
1. Heat 2 tsp oil in a pan at medium heat. Add sausage and fry for a few minutes until browned along the edges. Transfer to a bowl. Add 1 – 2 tsp oil to the same pan and add onion, peppers and salt, to taste. Saute for 6 – 7 minutes until the vegetables turn soft and develop some color. Add minced garlic, pepper powder and cook for 1 – 2 minutes. Add sausage and cook for one more minute. Switch off.
2. Warm the tortilla / chapathi and remove to a plate. Top it with sausage mixture and drizzle mayo sauce. Wrap up the lower portion of the roll using an aluminium foil, paper towel or wax paper to hold it together. Yummy sausage pepper rolls are ready to enjoy!!
