Unakka chemmeen ularthiyathu

Ingredients (Serves 3 – 4)

1. Unakka chemmeen (dried prawns) – 1 cup, cleaned

2. Coconut oil – 1 tsp + 1.5 tbsp

3. Thenga kothu / sliced coconut – 1/4 cup

4. Curry leaves – 1 sprig

Onion / pearl onion – 3/4 cup, thinly sliced and chopped

Ginger – 1 tsp, finely chopped

Garlic – 1 tsp, chopped

5. Turmeric powder – 1/2 tsp

Chilly powder – 3/4 tsp

Red chilly flakes – 1/2 tsp

6. Vinegar – 1 tsp

7. Salt – To taste

Method

1.Heat 1.5 tbsp coconut oil in a pan over medium heat. Add coconut flakes / thenga kothu , curry leaves, onion, little salt, ginger and garlic. Saute until onion turns light golden. Add turmeric powder, chilly powder, chilly flakes and saute for a few seconds. Add vinegar and mis well. Add dried shrimp. Mix well. Cook for a few minutes over low heat until crisp. Switch off. Serve with rice and other side-dishes.
