Ingredients (Serves 5)
1. Carrots – 3 – 4 medium, grated or finely chopped
2. Coconut oil – 2 – 3 tsp
3. Mustard seeds – 3/4 tsp
Dried red chilies – 2, broken
4. Curry leaves – A few
Onion – 1/2 cup, finely chopped
Grated coconut – 3/4 cup
Turmeric powder – 1/4 tsp
Green chilies – 2, sliced diagonally
Cumin powder – 1 – 2 pinches
5. Salt – To taste
Method
1. Combine grated coconut with turmeric powder, green chilies, and cumin powder. Set aside until ready to use.
2. Heat 2 – 3 tsp coconut oil over medium heat. Splutter mustard seeds and fry dried red chilies and curry leaves. Add carrot, finely chopped onion, salt and grated coconut mix. Mix well. Cook covered for 4 – 5 minutes. Open the lid and stir for a few minutes until completely dry (do not overcook). Switch off. Serve with rice.



so when do we use the cumin powder and turmeric pd?
