Kappalandi Mittayi

Ingredients

Roasted skinless peanuts – 2 cups

Sugar – 1 cup + 2 tbsp

Butter – 1/2 tsp

Salt –  2 – 3 pinches

Baking soda – 1/2 tsp

Method

1. Crush the peanuts slightly ( pulse it once or twice in the large jar of a mixie). Grease a plate or line a baking sheet with aluminum foil or parchment paper and set aside.

2. Heat a saucepan or any heavy bottomed pan on medium heat, add the sugar and heat until it caramelizes and turns to a golden brown color. It takes about 6 – 8 minutes. Add butter and salt. Mix and add baking soda. The whole mixture will start frothing now. Add in the peanuts, mix everything fast and immediately pour on the lined baking sheet. Immediately spread it evenly using a rolling pin. Using a greased knife, score lines on the brittle while still hot. Cool completely. Break along the lines and store in an airtight container.

Tip

You can try the same recipe with sliced almonds, mixed nuts etc.
