Pasta salad

Ingredients (Serves 2 – 3)

1. Pasta – 2 cups (I used rotini pasta)

2. Grape tomatoes – 15 – 20, halved

    Spring onion or 1/4 cup finely chopped red onion – 2 stalks, finely chopped

    Olives – 1/2 cup, sliced

    Fresh basil -  2 – 3 tbsp, chopped

3. Feta cheese, crumbled – 1/4 – 1/2 cup

For the dressing

4. Red wine vinegar – 1 tbsp

    Extra-virgin olive oil – 3 – 4 tbsp

5. Salt and pepper – to season

6. Crushed chilly flakes – 1/2 tsp

    Oregano – 1 pinch

Whisk red wine vinegar and olive oil in a small bowl. Add the other ingredients for the dressing and mix well.

Method

1. Cook pasta according to package instructions. Drain and rinse under cold, running water. Add 2 tsp olive oil and mix well.

2. Transfer cooked pasta to a large bowl and add the ingredients numbered 2. Mix well and pour the dressing. Toss everything well, taste-check for salt, add crumbled feta cheese / grated parmesan cheese / diced fresh mozzarella and serve after 10 minutes or cover and store in the refrigerator.

Tip

You can also use baby arugula, baby spinach, roasted red bell pepper, artichoke hearts, sun-dried tomatoes, capers etc in this recipe.
