Creamy Shrimp Scampi

Shrimp scampi

Ingredients (Serves 2)

1. Shrimp – 10 – 12 medium-large, cleaned and tails-on (You can remove the tails if you prefer)

2. Olive oil – 2 tbsp

    Butter – 1 tbsp

3. Garlic – 1.5 tsp, minced

    Onion – 1 tbsp, minced

    Red chilly flakes – 1/4 tsp

    Freshly ground pepper – 1/4 tsp

4. White wine – 2 tbsp

    Lemon juice – 1 tsp

5. Heavy cream – 1.5 tbsp

    Fresh parsley – 2 – 3 tsp, finely chopped

6. Salt – To taste

Shrimp scampi

Method

1. Heat olive oil and butter in a pan at medium heat. Add garlic, onion and stir for 1 minute. Add red chilly flakes and freshly ground pepper. Stir for a few seconds and then add white wine. Cook for a minute. Add shrimp and enough salt. Mix everything well and cook for 3 – 4 minutes until it turns pink and is done completely. Add lemon juice and mix well. Bring down the heat to low.

2. Add heavy cream and finely chopped parsley. Stir for a few seconds and switch off. Serve immediately with toasted Italian bread as an appetizer, over pasta  or over rice. Top with 1 – 2 tsp grated parmesan cheese if you like.
