Creamy mushroom pasta

Ingredients (Serves 2 – 3)

1. Pasta – 2.5 – 3 cups

    Mushroom – 250 gm,sliced

2. Olive oil – 1.5 tbsp

3. Onion – 1/4 cup, chopped

    Garlic – 2, minced

    Crushed chilly flakes – 1/4 tsp

4. Italian seasoning/ dried oregano- 1 pinch

5. Baby spinach – A handful

6. Heavy whipping cream –1/2 cup

7. Parmesan cheese – 2 – 3 tbsp, grated

8. Salt and pepper – To season


1. Heat olive oil in a pan at medium heat. Add onion, garlic, crushed chilly flakes and saute until onion turns transparent. Add mushroom slices, salt, pepper and cook for 3 -4 mts. Add heavy cream and 2 – 3 tbsp grated parmesan cheese. Mix well and cook for a few minutes until sauce is slightly thick. Taste-check for salt.  Add a handful of baby spinach and stir for 1 minute.

2. Meanwhile cook the pasta according to package instructions adding salt and till al dente. Drain the pasta and add to the mushroom sauce. Mix well. Sprinkle some parmesan cheese and serve immediately.
