Ingredients (Serves 3 – 4)
1. Prawns – 15 – 20 (Around 250 gm), cleaned
2. Yoghurt – 2 – 3 tbsp
Shallots – 15, thinly sliced
Ginger – 1 tsp, minced
Garlic – 3 medium, finely chopped
Curry leaves – A few
Green chilly – 1 , finely chopped
Turmeric powder – 1/4 tsp
Salt – To taste
3. Coconut oil – 1.5 tbsp
4. Medium thick or thick coconut milk – 1/3 cup
5. Curry leaves – A few
Ghee – 1 tsp
Method
1. Add all the ingredients numbered 2 to the prawns. Combine well with your fingers.
2. Heat coconut oil over medium heat. Add marinated prawns and cook for 5 – 6 minutes until 90% of the moisture evaporates. Add coconut milk and cook for a few minutes until the gravy thickens well. Add a few curry leaves and a tsp of ghee. Mix well and switch off. Serve with rice.
