Ingredients (Serves 4 – 6)
1. Eggs – 6
2. Onion – 1/4 cup, chopped (optional)
Green chilly – 1, finely chopped (optional)
Curry leaves – 2, chopped (optional)
Salt and pepper – To taste
Water or milk – 2 tsp
3. Beef – 200 gm, cubed
Cook beef pieces adding a little turmeric powder, pepper powder, 2 – 3 tbsp water and salt. Drain excess water. Crush in the small jar of a blender. It makes about 1.5 cups.
4. Coconut oil – 1 – 2 tbsp
5. Onion – 1/2 – 3/4 cup, finely chopped
Ginger – 2 tsp, finely chopped
Garlic – 2 tsp, finely chopped
Curry leaves – A few, chopped
Green chilly – 1, finely chopped
6. Turmeric powder – 1/4 tsp
Coriander powder – 3/4 tsp
Garam masala powder – 1/2 tsp
7. Crushed fennel seeds and black pepper corns – 1/4 tsp each
8. Salt – To taste
Method
1. Heat coconut oil in a pan over medium heat. Add finely chopped onion, salt, ginger, garlic, curry leaves and green chilies. Saute until light golden. Add spice powders numbered . Saute until their raw smell leaves. Add shredded beef and mix well. Add 2 tbsp water and cook for a few minutes. Add 2 – 3 tsp coconut oil and cook for a few minutes till beef is roasted slightly. Finally add crushed fennels and pepper corns. Cook for a minute. Switch off.
2. Beat eggs adding ingredients numbered 2.
3. Heat 1 – 2 tsp coconut oil in a small pan. Add 1/3 rd of the egg mixture (depending on the size of pan you use). Cook covered for a minute over low-medium. Sprinkle 1/4 – 1/2 cup cooked shredded beef mixture. Cook until done. Flip over to the other side and cook for 30 seconds. Transfer to a plate. Repeat with the remaining egg mixture. Serve with ketchup or with rice and other side-dishes.
