Ingredients (Serves 3)
1. Chicken – 1/2 kg, cut into small pieces
Turmeric powder – 1/4 tsp
Garam masala powder – 1/2 tsp
Pepper powder – 1/8 tsp
Salt – To taste
2. Coriander leaves – 1/2 bunch, rinsed well
Lime / lemon juice – 1/2 tsp
3. Coconut oil – 2 – 3 tbsp
4. Onion – 3/4 cup, finely chopped
Ginger and garlic – 1.5 tsp each
Green chilly, minced – 2
5. Tomato – 1 medium, chopped
6. Turmeric powder – 1/4 tsp
Garam masala powder – 1/2 tsp
Pepper powder – 1/8 tsp
7. Salt
8. Coconut milk, medium thick – 1/4 cup
Ghee – 1 tsp
Method
Heat coconut oil in a kadai over medium-high. Add onion, ginger, garlic, green chilies and little salt. Saute until onion turns golden. Add chopped tomato and saute for a few minutes. Add turmeric powder, garam masala powder and pepper powder. Mix well. Add chicken pieces and mix well. Cook covered over low-medium heat, stirring occasionally until almost done. Add coriander paste and mix well. Cook for a few minutes. Add coconut milk and cook for a minute. Add 1 tsp ghee. Mix well and switch off.
