Hyderabadi Dum ka Chicken / Dum ka Murgh

Dum ka Chicken

Ingredients (Serves 4 – 5)

1. Chicken – 1 –  1.25 kg, cut into medium pieces

2. Onion – 1 medium-large or 2 – 2.5 cups, thinly sliced and fried until golden brown (do not over fry the onions, they will taste bitter)

Whole spices – Shahi jeera / kala jeera – 1/2 tsp, cardamom – 3, cloves – 6, cinnamon stick – 1/2 inch piece

Ginger-garlic-green chilly paste – 1.5 tbsp (Grind 3 – 4 medium cloves of garlic, 1/2 inch ginger and 2 green chilies to a paste)

Cashews – 10 – 15 + 2 tsp kus kus, soaked in little hot water for 15 minutes and ground to a fine paste in the small jar of a blender

Yoghurt – 1/3 cup

Turmeric powder – 1/2 tsp

Chilly powder – 2 tsp

Coriander powder – 2.5 tsp

Cumin powder – 1/2 tsp

Garam masala powder – 1/2 tsp

Sugar – A tiny pinch

Kewra water – 1 tsp (optional)

Coriander leaves / cilantro  – 1/4 cup, chopped

Mint leaves – 1/4 cup, chopped

Lemon juice – 1 tsp

Oil – 2 tbsp (You can use the oil used for frying onion)

3. Water – 3/4 cup

4. Butter – 1 tbsp

Method

1. Combine all the ingredients numbered 2. Taste-check for salt. Marinate the chicken pieces with this mixture for at least 3 hours or overnight in the refrigerator. Take it out of the refrigerator half hour before cooking.

2.  Melt 1 tbsp butter in a heavy-bottomed vessel. Add 3/4 cup water to the chicken pieces and mix well. Transfer it to the pan. Cover the vessel with an aluminium foil and press tightly over the edges. Cover with a  tight-fitting lid and then place a heavy object on top. Next place a flat tawa on the stove and place the vessel on top. Cook for 10 minutes over medium heat. Next reduce the flame to low and cook for 30 minutes. Rotate the pot on the tawa every 15 minutes. Switch off. Let it rest for about 20 minutes. Open the lid. Mix well. taste-check for salt and masala. Yummy dum ka murgh is ready to serve! It tastes best with pulao / chapathis.
