Ingredients (Serves 5)
1. Spinach – 2 – 2.5 cups, finely chopped
2. Coconut oil – 2 – 3 tsp
Mustard seeds – 3/4 tsp
Dried red chilies – 2, broken
3. Onion – 1/2 cup, chopped
Green chilies – 2, diagonally sliced
Curry leaves – A few
4. Turmeric powder – 1/4 tsp
5. Eggs – 2, beaten
6. Grated coconut – 1/2 cup
Cumin seeds / jeerakam – 1 pinch, crushed
7. Salt – To taste
Method
1. Combine grated coconut with turmeric powder and a pinch of crushed cumin seeds.
2. Heat 2 – 3 tsp coconut oil over medium heat. Splutter mustard seeds and fry dried red chilies. Add onion, green chilly, curry leaves and little salt. Mix well. Cook for a few minutes. Add beaten egg and little salt. Scramble until 3/4th done. Add spinach and stir for 2 – 3 minutes until spinach is wilted and done. Add grated coconut and cook for a minute or two. Switch off. Serve with rice and other side-dishes.
