Chemmeen Vada

Ingredients (Makes about 12 – 15 small vada)

1. Prawns – 1.5 cup chopped (Around 20 large prawns), clean, rinse and pat dry with paper towel

2. Grated coconut – 1/2 – 3/4 cup

   Green chilies – 4 – 5, chopped

   Shallots – 4 – 5, chopped

   Ginger – 1/2 inch, chopped

Garlic – 4 small cloves, finely chopped

   Curry leaves – 10, chopped

   Turmeric powder – 1/2 tsp

   Chilly powder – 1/2 tsp

   Pepper powder – 1/2 tsp

3. Salt – As required to taste

4. Oil – To deep / shallow fry

Method

Grind the chopped raw prawns along with all the ingredients numbered 2 to a coarse mixture (pulse 2 – 3 times in the small jar of a blender in 2 – 3 batches). Transfer to a bowl and add enough salt. Grease your palms with little oil and make small balls from the mixture. Flatten into thin discs and deep fry in oil in 3 – 4 batches, until browned, about 3 minutes on each side. Serve chemmeen vada as is or with rice. It tastes best after 15 minutes. Its easy and yummy, do try it out!

You can also pan fry them but fry at medium-low heat and cover with a lid for a few minutes in between so that the inside is also cooked well.
