Ingredients (Serves 3)
1. Chicken wings – Around 1 lb (Around 8 – 10 wings)
Salt – Around 1/4 tsp or as required
Pepper powder – 1 pinch
Baking powder – 1/2 tsp
2. Sesame oil – 1 – 1.5 tsp
Garlic – 1/2 tsp, minced
Crushed red chilly flakes – 1/2 tsp
3. Soy sauce – 1.5 – 2 tsp
Rice vinegar – 2 – 2.5 tsp
Fresh lemon / lime juice – 1 tsp
Sriracha chilly sauce / chilly garlic sauce – 1 tbsp or to taste
Ginger powder – 1 pinch
Honey – 2 – 2.5 tsp or to taste
4. Corn starch – 1/4 tsp dissolved in 1 – 2 tbsp water (optional)
5. Chopped spring onion and sesame seeds – To garnish
Method
1.Clean and cut the chicken wings between the joints into 2 pieces – drumette and wingette (discard the tip). Combine them with 1/4 tsp salt, pepper powder and 1/2 tsp baking powder. Arrange them on a greased foil or parchment paper. Bake them at 425 F for 14 – 15 minutes. Flip over and bake for another 14 – 15 minutes until golden brown and slightly crisp. (If the chicken wings are large, bake for 15 – 20 minutes on each side).
2. Combine all the ingredients numbered 3 in a small bowl.
3. Heat sesame oil at low heat. Add minced garlic, chilly flakes and stir for a few seconds. Add soy sauce mixture and cook for 30 seconds at medium heat. Taste-check for salt. Add 1 tsp corn starch in water (if using) and mix well. Cook for 30 seconds. Add the cooked chicken wings and toss them with the sauce at high heat. Switch off. Sprinkle chopped spring onion and sesame seeds. Serve immediately! It tastes awesome, I hope you give this a try!!
