Ingredients (Serves 2 – 3)
1. Pasta – 1.5 cups
2. Mushroom – 1 cup, sliced
Broccoli florets – 1 cup
Carrot – 1 medium, sliced diagonally
Zucchini – 1 small, sliced (optional)
Fresh or frozen green peas – 2 – 3 tbsp (optional)
2. Butter – 1 – 1.5 tbsp
Heavy cream – 1/4 cup
Parmesan cheese, grated – 1/3 cup
Mozzarella/ cheddar cheese – 2- 3 tbsp, grated (optional)
Italian seasoning – 1 pinch
Garlic powder – 1 pinch
Onion powder – 1 pinch (optional)
Salt and pepper – To taste
Method
Cook pasta according to the package instructions. Two minutes before the pasta is ready to drain, add sliced mushroom. After 1 minute, add broccoli, carrot, zucchini and green peas. Cook for 1 minute. Drain in a colander and then transfer back to the original pot immediately. Add butter, heavy cream, cheese, Italian seasoning, garlic powder, onion powder, salt and pepper. Mix well and cook for a minute at low heat. Delicious pasta is ready! Switch off the stove and serve hot!
